Ich nämlich *ggg* Greez, lustikus Ich habe eines von ihm von vor der eigentlichen Produktion Aber halt vorher ausgiebig getestet .... ! Und ich find es doch toll! Das Messermacher i.d.R. immer besser wird, wrid wohl niemand bestreiten. Und wenn man Messer unter der Prämisse "ich will für mein Geld das messertechnische Optimum" bestellt, dann ist eine Erst- oder Frühbestellung sicher blöd. Aber es gibt eben auch mehr. Aktuelles Beispiel Luis. Natürlich habe ich mit von ihm zwei Messer bestellt, obwohl ich weiss, dass ich in 2-3 Jahre sicher ausgereifteres von ihm bekommen kann. Vielleicht bestell ich dann ja auch nochmal, wer weiss. Aber bis dahin unterstütze ich damit jemanden, der vielleicht einen Impact auf mein Hobby haben wird, so Community und so.... Und das ist mir persönlich fast wichtiger, als irgendein supershiney Einhornmesser vom Mars, das jeder will.. Full ack! Sehr geile Einstellung!

Ich hab eines der ganz frühen Dalmans und auch ein Neueres. Ich finde das Alte besser 😉 Interessant... hatte ein altes zum ausführlichen Test, habe ein Neues und finde das Neue um Länger besser Gruß, Gabriel

Dear all, I have to write in English and I hope that is OK. My written German is basically non existent. I was made aware of this forum by Benjamin Nakiriman when he “discovered” my knives in the beginning of the year and ordered a custom, thank you. I have been reading occasionally since and found that very interesting and high quality talks goes on here. This morning I noticed this thread about my knives, that is awesome! It is great to get some feedback, also when it is critical. My goal as a knife maker is to make great knives and continue to learn and improve. Reading through, with my limited German, I guess the gist is that my knives look cool but need to prove themselves in order to be worth their price. I think that is a perfectly fair assessment. I have a few takeaways from the thread: First I have to be more clear who a knife is intended for. Most of the knives I make are for normal people to use in the kitchen. Those knives, in my mind at least, are more sturdy and will not be damaged my cutting through bone and such. I aim at 0,3mm behind the edge for those. The few knives I make for enthusiasts, like you guys, I go a lot thinner and mostly also temper less aggressively to keep a higher hardness. I am happy to do both kinds even if the very thin knives take a longer time to make. Another thing is writing “high performance knives” on my website. I will change that back to “function knives” as I also write in Instagram, and let the customers judge if it is high performance or not. Certainly my standard chef knife is not high performance by the standards of this forum. Thirdly the price might be too high. I have tried to be reasonable and certainly do not run laughing to the bank every month. I will keep it in mind. A little background for those interested: The reason I started getting into kitchen knives was through having cooking as a hobby. My first knife was the then brand new Global G2 and since then I have acquired more knives than I needed, mostly Japanese western style knives. With the knives follows sharpening and stones, you know the drill 2 years ago I started making my own knives and I got in contact with the Danish knife making community who are a super helpful and friendly bunch. However they never thought about making anything but hunting knives and me showing up with long slim chef knives was a bit of a rarity. Nevertheless there are a good amount of overlap and many things to be learned from these guys. As the hobby of knife making became more serious I decided to make it my primary focus, so I quit my normal job and set up a web shop January 1st this year. The last few month have been great fun and very rewarding. And the progress has certainly beaten my expectations. Regards Steffen

Well its more Quality than just quantity here and we love to discuss a lot and its a interesting mix of people here! Haha cool a Global G2 was also my fist "real kitchen knife" Seeya daniel and have afun and as you can see its no problem for us if you write in english.. google translate is quiet ok to translate our german written stuff for you but please ask if theres anything and no holding back )

I recently discovered the website deepl.com for translation purposes which proved to be super helpful to me when google translate reaches its limits (which happens quite often in my experience).
