My cousin is a home cook who loves cooking and who cooks good. He has a 180 zwilling chef. I want to offer him a serious knife for his bday. I was looking for a 240 guyto either in strainless or better in stainless clad (no need to baby them too much for a newbie). I would like it to be a tall one with a decent grind. I was thinking a Wakui SS, or more orginal a shibata kotesu 240.

Moin zetieum , I would go with this one: www.knivesandstones.com.au/collections/tanaka-blue-2/products/tanaka-blue-2-nashiji-gyuto-240mm-stainless-cladmy best friend (also quite a decent hobby cook, no knife nut but he knows how to use a good knife and take care of it) uses this as his single knife since 1 or 2 years and he is very satisfied. "only knife he will ever need" is the usual comment Tried it myself a few times. A very good deal IMHO. F&F is decent. Grind is good. Steel is a good compromise between sharpenability, edge retention and robustness. I even like the profile (much better than the K-Chef's one btw ... food release is also better...) A little over budget but worth it IMHO.. a true allrounder. But Wakui would also be a good alternative IMHO... Gruß, Gabriel

+1 for the Tanaka. I have the ku version in 210mm an I really love the steal and tanakas treatment. Also the Profile is absolutely flawless in my opinion.

And you would say the grind is good? thin enough behind the edge for killing carotts ? Its not a laser in any way shape or form, BUT you can thin it out pretty easy if needed. What still amazes me, is that the tanaka is pretty much the only high hardend knife i own or tested which never had a single chip. And i have had some seriously low angels on the Tanaka. ...I would love to get my hands on @gabriels 240 mm nashiji. This could very well be the perfekt japanese knife for my taste, at this stage of my kknive journey.

Moin, +1 für Tanaka Blue 2 Nashiji Hier zwar in 270mm für Paprika und Zwiebeln, Karotten gehen aber auch ! Kann ich empfehlen ! Gruß Jörg
