Hi KMS, I'm a new member from the US, thought I'd introduce myself with a little project I worked on recently. I will do my best to read the German here!
Last month, I challenged myself to sharpen to HHT sharpness on a medium-grit stone only, freehand. No finishing stones or strops. I chose the JKI 2k soaking stone, which is a personal favorite.
The main purpose was not to shave, but the force myself to get a clean edge with minimal burr. Really it was a practice exercise in deburring - I didn't plan the end result to be good for everyday use.
For my first challenge I tried a Mac Pro AUS-8, and a Yoshikane SKD-12. I was able to get some fairly good results using my badger hair shaving brush (my own hair is very fine).
I did find the edge to be fairly weak, mostly due to the low sharpening angle, but it was pretty clean. I'm going to try again with a Kochi with V2 carbon steel next week.
Has anyone else every practiced to refine their technique like this? I didn't get unvarnished success, but it was promising! There's a playlist with some other videos, but these should give a good idea.

Nice, i usually go for HHT-5 but not freehand . Can you guess what sharpening angle was used in your case ? Greets Sebastian.

I wish I knew! I've never used an angle guide. I would guess that it was "half a book of matches", or maybe slightly more obtuse.

Hi, i am not impressed how ist rips the tissue After 40 years of freehand sharpening, I found out that a guided system for bankstones ist far superior.... ... so im am getting cleaner cutting results in no time even with a 2.5k Venev Diamond stone Regards Uwe

I wish I knew! I've never used an angle guide. I would guess that it was "half a book of matches", or maybe slightly more obtuse. Ok, with such low angles it is very easy to get sharpness like your`s shown. Take a Yanagiba with about 7-10 degrees, a good 1k stone should be enough for HHT-3. But don`t take me serious i`am cheating with sharpening systems . Greets Sebastian.

Good job sharpening freehand. I've come the long way round and invested lots of time and money during my sharpening journey ... In the end you need sharp knives and a sharpening method you enjoy and that fits your daily routines. Whatever this may be ... For me it's boiled down to simple soft steels + honing steel (Dick Dickoron Micro - sounds obscene but really isn't ) or simple but harder steels + fine stone (coticule mostly). Works fine for me .
