Wie es euch besser paßt, mir ist das egal ob es von Klaus zu dir und von dort zu Gabriel geht, oder ob es zuerst zu Gabriel und dann über dich am Ende wieder bei mir landet. Was euch besser paßt, ihr müßt euch auch da nicht zwingend sklavisch an die Zeiten halten. Wenn es bei dir aktuell eher stressig ist, Gabriel es aber gerne für die Aktion bis zum 9.12 bei sich hätte, könnt ihr es auch gerne so machen, daß es bis dahin bei ihm bleibt und du es mir als letzter dann wiedergibst, wenn es zeitlich bei dir paßt. Ob das dann noch vor Weihnachten oder erst im neuen Jahr stattfindet, macht für mich keinen Unterschied. Ich verhungere hier aktuell nicht...

Ein Blick in meinen Kalender sagt, dass es sinnvoller ist, wenn Gabriel das Messer als Nächster bekommt und ich dann irgendwann nach dem 9.12. Karnstein: Vielen Dank, dass du bei den Zeiten so flexibel bist! Viele Grüße Jörg

das Dalman ist soweit gut bei mir angekommen. Jetzt bin ich mal gespannt. Die Spitze ist ja wirklich unglaublich flexibel... Werde das Messer dann jetzt bis zum 9.12. testen. Danach nochmal schärfen und zu Jörg schicken (bräuchte dann übrigens noch mal deine Adresse per PM bitte!)

Moin zusammen, so..ausführliche Testphase ist abgeschlossen! Das Messer hat die Aufgaben (insbesondere gestern auch die Weihnachtsfeier) soweit gut überstanden. Jetzt wird es noch geschärft und kann Montag weiterverschickt werden. Review folgt! Gruß, Gabriel

Das Messer ist wohlbehalten bei mir angekommen. Karnsteins Dalman ist schon ein ganz besonderes Messer - bisher habe ich es aber nur bestaunt und noch nicht damit geschnitten. Viele Grüße Jörg

Das Messer durfte auch in meiner Küche schon einmal ran. Ich glaube, so vorsichtig war ich noch nie... das Dalman ist bei der Länge sowas von leicht und die Spitze so dünn ausgeschliffen - das bin ich nicht gewohnt. Das Messer geht nach Absprache mit Karnstein Anfang des Jahres an ihn zurück - nach meiner persönlichen Weihnachts-Verwandschafts-Odysse und nach dem Wehnachtsstress der Paketdienste. Mein Review kommt dann auch. Viele Grüße Jörg

I just read a little in this thread and was a little concerned with something.
I'm very much of the impression that this knife did not leave me with what you call an "overgrind" (I may not always come off very proud, but I take a good deal of pride in my work), and find it very troubling to see that claimed and not be brought to my attention or letting me have a look at it/reply.

Also I hope readers are able to understand this knife doesn't represent fully what you would get from me (then or today) as it's been sharpened in a (to express myself diplomatic) very different way, by someone with a different sharpening philosophy than me.

No worry`s Robin!, we allready discussed the overgrind problematics (that often occurs on such thin ground knives....), and even a few missleaded sharpening strokes can lead to this. As you stated, we have to take care to hit any part of the blade in the same way.... And this "overgrind" was so tiny it was just minor, so i doubt that anyone even noticed it. Btw. can you post a sharpening vid from you (in your subboard)...... Would be interested in your method. Greets Sebastian.
